Carb-filled but on point Wednesday

It's a rainy day here in Tuscaloosa. Not a hard rain but one of those misty rains. Can't believe it's Wednesday already. I know it's the new year but I have been kicking bootie this week. Waking up every morning before my alarm, getting ready, doing my Bible study and getting to work on time everyday this week so far. =) So proud of myself... lol! I started this day with a bowl of yummy cheese grits (2pt). I head to work and there in the teacher's lounge like every Wednesday is a table full of teacher's snacks. I told myself when we started school back to not take my break anymore in the Teacher's lounge, b/c there is always junk food in there. So it's day 3 of work and I haven't yet. Go me! Instead on my break I had a banana (2pt) and some almonds (2pt) in my classroom.
At lunch I warmed up a bowl of Chicken Noodle Soup (1.5), Carrot sticks with Ranch (1.5pt), and a Cheese stick (1.5). It's so funny how all of it was 1.5 points each.
The day pretty much flew by after lunch. I got a lot of my student's desk cleaned out. Yes I know I should make them do it, and I do, but their version of clean and mine is a different subject. If you know me you know this is one thing I am a bit ocd about. My friends make fun of me that I do the dishes before we are even done eating. lol!
After work I had a Doctor's appointment, so while I was there I got him to give me a b12/b6 shot for some extra energy, and boy did it kick in quick. I am feeling it. I rushed home to cook dinner so we could get to the gym. I took all these ingredients:
and made this: Not pretty but oh so yummy. It was 7.5 points a serving according to my calculations. Since I had only had 10.5 points so far I went ahead and had 2 servings. ;) After we ate dinner, I hurried to get the dishes done and put my gym clothes on. I knew if I sat down I would crash and not want to go. So we headed to the gym. I burned 485 calories on the elliptical machine. Go me! I'm waiting a few weeks before I start to hit the weights again. It's been about 3 months since I have truly worked out hard. So I am going to take my time and work back up.
Well, I am very happy with my day! Even though I had lots of carbs, I stayed in my points.
